Outdoor kitchen and built-in barbecue

An outdoor kitchen demands decisions on fire, smoke, materials and winter water. What is allowed in Catalonia in summer, which stone and steel withstand sun and sea, and what works on a penthouse terrace.

Can you use a wood barbecue in Catalonia in summer?

Gas grills and masonry barbecues with a spark arrestor on an urbanisation plot are allowed all year without a separate permit, but not on days of heightened fire danger. For charcoal and wood the rules are stricter: from 15 March to 15 October, on forest land and within a 500 m strip around it, lighting a fire needs authorisation.

The general Catalan rules are set out by the Departament d'Interior on its barbecue page. In practice: check the fire danger map on the day you plan to light up and do not light if the level is high. For a house next to woodland, in the Garraf or the Maresme, the calmest choice is gas.

Which materials withstand sun and sea in an outdoor kitchen?

By the sea use 316 stainless steel; inland 304 is enough. Worktops are made of granite with a honed or flamed finish, sintered stone, or large-format porcelain slab. They do not fear heat, grease, UV or acids, and need no sealing.

Marble and soft limestone are wrong for an outdoor kitchen: grease and lemon juice stain them, and sun and salt attack the surface. Timber not treated for outdoor use cracks in two or three summers. Carcasses are made of concrete or clad masonry, stainless steel or marine polymer (HDPE), with hinges and handles in 316 stainless.

Inside the grill, refractory brick and a gap to any combustible cladding are needed. Everything around the fire is finished in non-combustible material: stone, ceramic, steel. The fridge and appliances are outdoor-rated and moisture-protected: an ordinary domestic one fails within a season.

Gas, charcoal or wood: what to choose for the grill?

Gas gives a fast start, even heat and almost no smoke, and it can be used in a dry summer. Charcoal and wood give flavour and ritual, but plenty of smoke and sparks. Many people build a hybrid: a gas hob and grill plus a separate wood zone with a proper flue.

Gas is run on a fixed line. The cylinder is stored in a ventilated compartment, not a closed cupboard with no ventilation. Installation is by an authorised gas installer with a certificate, which is a safety requirement and a condition of insurance. If the house has natural gas mains, the line is laid at once during construction.

Smoke. The flue height is calculated so smoke leaves above the neighbours' windows, not into them. Wind is accounted for: in summer on the coast the sea breeze blows in the daytime and smoke comes back to the plot. So the fire is placed downwind of the terrace and bedrooms, away from the boundary. A hood over an enclosed fire needs extraction sized to the volume.

How do you protect an outdoor kitchen in winter and supply water?

On the coast frosts are rare but not impossible, especially inland and in the foothills: at night in the Penedès the temperature drops below zero. Water pipes are run insulated and buried, with a shut-off valve on each branch and a drain point at the lowest level. Before winter the water is shut off and drained.

The sink. It is usually placed beside the house door so the supply stays short. The waste connects to the sewer, not onto the ground.

Outdoor electrics go through a 30 mA RCD with IP65-rated sockets. Lighting of the work zone is separate from general lighting. For winter the grill gets a cover and cushions and small appliances are taken away; stainless steel is rinsed so salt does not leave marks. Timber or fabric furniture is better stored, while built-in units can stay: they were made for outdoors.

Where should the kitchen go so that it is comfortable to use?

Close to the house and kitchen: within 5–8 steps of the indoor kitchen, otherwise you spend the evening running with plates. Next to the dining area but not in its centre: the cook should see the guests and they should not sit in smoke.

The working triangle is simple: grill, sink and fridge within arm's reach. A worktop at about 90–92 cm, 2.5–4 m long, with space for prep and serving. Storage underneath, not an empty gap.

Shade. Cooking in the open in the south by day is hard, so the fire goes under a porch or pergola, always with extraction planned. For evenings you need warm light at several levels: light under the worktop, wall sconces, candles on the table. One separate point: the floor. Class 3 anti-slip porcelain gives safety where grease and water drip.

Can you have a summer kitchen on a penthouse terrace?

You can, but almost always without open flame. The statutes of the comunidad de propietarios often ban barbecues and gas appliances on terraces, and with an open fire the fire-safety part of the building code applies. The realistic option for a penthouse, say in Sant Gervasi or the Eixample, is an electric or induction hob, a plancha with extraction and an electric grill.

What is settled before design. The community's consent for works and use of the terrace: the facade and shared walls belong to the whole building. The load on the slab: a granite worktop and units weigh hundreds of kilos and the structural engineer calculates it. Waterproofing of the terrace under the kitchen and drainage of water. Noise and smells for neighbours, especially on upper floors around a narrow courtyard.

A light kitchen on wheels or a modular one with an electric grill is often more practical than a built-in one: it can be removed if the rules change.

A light kitchen on an existing terrace often needs no licence, but the gas line, flue and canopy come under the design and approval. If woodland is nearby or you live in a block, there are specific rules. Ask the ayuntamiento before ordering equipment.

The range is too wide for one figure: from a simple block with a grill to a full kitchen with sink, fridge, hood and stone worktop. The price depends on materials, gas and services. The real figure comes from an estimate after a visit and measurements.

Which is better: built-in or modular?

Built-in lasts longer and looks integrated, but it cannot be moved and needs permits. Modular in stainless steel or polymer is cheaper, mobile and suits a rented house, a penthouse or a plot where rules may change. For a villa meant for life, built-in is usually the choice.
